Baingan Bharta (Eggplant Curry) Recipe


Baingan Bharta
Baingan Bharta is type of kathiyawadi dish which enjoy a most with Bajri na Rotla (Millet Rotis).

Ingredients

2 tbsp oil or ghee
2 medium sized brinjals (baingan/eggplant)
2 chopped onion
2 chopped tomatoes
5 chopped Garlic
1 piece slices ginger
2 to 3 chopped green chillies
1/2 tsp cumin seeds (jeera)
1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
salt to taste
Fresh chopped Coriander Leaves

Method

1. Brush the eggplant with oil and pierce it with a knife so that it can be roasted well. Roast the eggplant till it turns soft. Take good time in this process.
2. Peel off the skin and mash it properly.
3. In pan heat oil/ghee,fry onion and chopped garlic till golden brown now add cumin seed,tomatoes,chili powder,turmeric powder,ginger,green chilies for 2 mins then add mashed baigan then fry for 5 mins.
4. Garnish with Coriander and serve hot with roti or naan. Even you can serve rice also.
