Aloo Palak is a nutritious North Indian recipe which is prepared with pureed spinach and potatoes that are simmered in spices.It is iron-rich and vibrant green curry type of recipe.
Ingredients
2 lb Spinach finely chopped
1 lb potatoes cuts into quarter pieces
2-3 lemon wedges
2 green chilies
1 tbsp melted butter
A pinch of asafoetida
1 tsp cumin seeds
salt to taste
Method
1. Boil the potatoes, but don''t let them get too soft.
2. Cube the poatatoes and keep aside.
3. Clean and coarsely chop the spinach.
4. Heat the butter in a sauce-pan and fry the asafoetida and cumin seeds and fry for 2 minutes.
5. Add the spinach, potatoes, salt and chilies.
6. Cover and cook over a moderate heat and cook till done.
7. Arrange the lemon slices over the mixture.
8. Cover, lowering the heat and cook for another 5 minutes.
9. Serve hot aloo palak.
