Vegetable Appe Recipe


Appe is a very popular south indian breakfast item. It could be called a cousin of idli, though a bit tastier. It is cooked in a special vessel which has depressions to pour the batter in.


Ingredients

1 cup split black gram (white udad) dal
0.5 cup thick beaten rice (poha)
0.5 cup chopped onion
0.5 cup chopped Tomato
0.5 cup chopped cabbage
1 tsp minced ginger
4-5 chopped green chillies
1/4 tsp asafetida (hing)
salt to taste
2 tbsp oil

Method

1. Wash rice and dal and soak in water for around 6-8 hours.
2. Add to the wash poha and add them to the rice and urad dal, water as required, Grind all of them to a smooth batter.
3. Add half of oil into the Pan, add asafetida, onion, Tomato, cabbage, ginger, green chillies and salt to taste and cook it well.
4. Then heat the appe pan (pan with small round despressions similar to the muffin pan), add 2-3 drops of oil in each depression and then scoop a spoon of batter and drop it into each such depression.
5. Cover and cook for 4-5 minutes or until they start to turn golden brown from bottom.
6. Cook for around 2-3 minutes and remove from the pan.
7. Serve hot with coconut and coriander chutney or sambar.
