Vegetable Poha (Vegetable Rice Flakes) Recipe



Vegetable Poha is a nutritious breakfast dish that's really easy to make and is commonly eaten in most houses. Which has lots of nutrients like iron, calcium, vitamins B and C.

Ingredients

1.5 cups poha (beaten rice flakes)
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp Asafoetida (hing)
1 large chopped potato
1 large chopped onion
1 large chopped tomato
1 chopped capsicum
1 to 2 chopped green chillies
1/4 tsp red chilli powder
1/4 tsp turmeric powder (haldi)
2 tsp sugar
3 tsp lemon juice
1 tsp oil
salt to taste
2 tbsp chopped coriander (dhania)

Method

1. Place the poha on a sieve and wash lightly. Drain and leave aside for 10-20 minutes.
2. Heat the oil in a non-stick pan and add the mustard seeds. When they crackle,add Asafoetida
3. Add the onion,potato and green chillies and sauté till it turns brown.
4. Add the tomato and capsicum.
5. Add turmeric powder, red cilli powder, sugar and salt and sauté for 3 to 4 minutes.
6. Add the poha and lemon juice and mix well.
7. Serve hot, garnished with the coriander.
