Malai Kofta Recipe



Malai Kofta is the vegetarian alternative to meatballs which is a very low calorie recipe. It can be serveing with rice or rotis.

Ingredients

Kofta :

1 cup mash paneer
2 tbsp chopped coriander leaves
1/2 tsp cumin seed (jeera)
1/4 tsp salt
1 small finally chopped green chili
0.20 lbs green peas
0.20 lbs finely chopped cauliflower
0.20 lbs finely chopped french beans
0.20 lbs finely chopped carrots
0.20 lbs boiled and mashed potatoes
2 tbsp bread crumbs
1 bread slice, soaked in water
1 tsp garam masala
1 tsp chilli powder
1 1/2 tsp lemon juice
oil for deep-frying
salt to taste

Gravy :

3 tbsp ghee
5-6 cashewnuts
1/4 tsp asafetida (hing)
1 tsp cumin seed (jeera)
2 tomatoes
3 onions
1 green chili
2-3 cloves garlic
1 tbsp coriander powder (dhania)
1/2 tsp turmeric (haldi)
1/4 tsp red chili powder
2 tsp. grated ginger
1/4 cup cream
2 tbsp chopped coriander leaves
1 cinnamon
6 cloves
6 cardamoms
1 tbsp cornflour
1 tsp sugar
1 tsp garam masala
1 tsp chilli powder
1 cup water
salt to taste

Method

For the koftas :

1. Boil the grean peas.
2. Boil the cauliflower, french beans and carrots in a pressure cooker without adding water.
3. Add the vegetables and peas to the potatoes and make a dough.
4. Add 1 tbsp of bread crumbs, mash paneer, coriander leaves and the bread slice.
5. Add the paste, garam masala, chilli powder, lemon juice and salt and form into small balls.
6. Roll the koftas into the remaining bread crumbs and deep fry in oil to a golden brown colour. Keep aside.

For the Gravy :

1. Blend the tomatoes, onions, green chilies,garlic and ginger to make a paste.
2. Mix cream and cornflour and keep aside.
3. Heat the oil in a pan and add the hing and cumin seeds.
4. Add the blended paste, coriander powder, turmeric, red chili powder and cook for about 10 minutes
5. Add mixure of cream and cornflour, cashewnuts, garam masala, salt and one cup of water and let it cook covered for 5 minutes.
6. Add koftas when you are ready to serve.
7. Serve it with garnish coriander.
