Pav Bhaji Recipe


Pav Bhaji is most popular fast food dish for Gujaratis, It is very spicy blend of vegetables.It also known as seven color dish.

Ingredients

4 big potatoes
1/2 cup chopped cauliflower
1/2 cup carrot
1/2 cup green beans
1/2 cup peas
2 chopped green chilies
1 finely chopped onion
5 finely chopped tomatoes
1 cup finely chopped Capsicum
2 tsp garlic paste
2 tsp ginger paste
2 tsp ghee
2 tsp butter
2 tsp garam masala
1 tbsp lemon juice (adjust to taste)
1/2 tsp chili powder
1/2 tsp turmeric
8-10 pav buns
Salt to taste
1/4 cup water


Method

1. Boil all the vegetables potatoes, cauliflower, beans, peas, and carrot. Don’t add too much water.
2. After boiling drain out the excess water and mash them.
3. Heat the ghee in a large pan, add the onion and capsicum and cook for 2 minutes. Then, add the prepared chilli-garlic paste and cook till the onion softens.
4. Add the tomatoes till the oil separates.
5. Next add the red chili powder, turmericpowder, salt, garam masala and mix it well.
6. Add mashed vegetables and add ¼ cup of water or as needed and let it cook for 5 minutes.
7. Turn off the heat.
8. Add lemon juice and mix it well.
9. Toast the bun using butter over medium heat on tava until buns are golden brown from both sides.
10. Serve toasted buns with bhaji (mixed vegetables), garnish with chopped coriader leaves and butter.
