Dum Aloo Recipe



Dum aloo is an awesome cuisine specialy for potatoes lovers, it is one of the popular north Indian dish. You can enjoy it with roti or rice.

Ingredients

10 small potatoes
3 medium sized onions
2-3 tbsp shredded coconut
1/4 inch of ginger
4-5 green chilles
2-3 cardammom pods
1 tbsp sesame seeds
1/2 cup curd
1 tsp garam masala powder
1 tbsp poppy seeds
2.5 tsp coriander powder
1/2 tsp cumin seeds powder
1 tbsp fennel seeds
1/4 tsp asofetida
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tbsp chopped coriander leaves
Oil for deep frying the potatoes and onions
2 tbsp ghee
3-4 cups water
Salt to taste

Method

1. Heat the oil in a frying pan over medium high heat. Fry the potatoes till they turn slightly brown and drain it and place on a paper towel.
2. Heat the remaining oil and fry the onions till it turns into light brown.
3. Blend light brown onions, sesame seeds, poppy seeds, fennel seeds, coconut, cardammom, ginger, green chili and make it into a paste. Use water as needed to blend into paste.
4. Heat ghee in a shallow pan add asofetida and paste of onions , sesame seeds, poppy seeds, funnel seeds, coconut, cardammom, ginger, green chili.
5. Add salt, red chili powder, garam masala powder, coriander powder, cumin seeds powder and turmeric powder and stir for 7-10 mins.
6. Add curd and fried potatoes.
7. Add enough water to cover the potatoes and simmer till the gravy is thick for about 10 minutes.
8. Garnish with the chopped coriander leaves and serve hot with roti or rice.
