Mexican Beans is one of the most famous Mexican Dish, which is using in all type of mexican platter. It is very healthy and contains lots of proteins.
Ingredients
2 cup red kidney beans (rajma)
2 large tomatoes, chopped
1 capsicum chopped
1 tsp garlic paste
2 to 3 finely chopped green chillies
2 chopped onions
2 tsp red chili powder
2 tsp ajwain powder
2 tbsp butter
2 tbsp shredded mozzarella cheese
2 tbsp olive oil
salt to taste
Method
1. Wash the beans and soak in water overnight.
2. Add beans in a pressure cooker and boil them.
3. Drain the beans, mash them and keep aside.
4. Heat the oil into pan, add ajwain powder and fry the onions, tomatoes, capsicum, green chillies, garlic paste for 2 mins.
5. Add the beans, chili powder, butter and salt and cook for 2 to 3 minutes.
6. If the mixture is dry, add the drained water.
7. Garnishing with cheese and serving hot.
oh how I love Mexican beans, and these ones sound good. The only downside for me is how long they take if you're making them from scratch like this, but such is life huh? They're worth the effort imo!
