Vegetable pulao is a nutritious dish and a complete balanced meal in one package. It is a North Indian vegetarian rice dish. You can enjoy it with raita, pickle, kadhi and papad.
Ingredients
2 cup cooked rice
0.5 cup green peas
0.5 cup green beans in small pieces
0.5 cup potatos in small pieces
0.5 cup carrot in small pieces
0.5 cup onion in small pieces
1 tbsp green chili paste
1 tsp caraway seeds (shahjeera)
0.5 tsp asafoetida
1 tbsp lemon juice
4 tbsp ghee
8 cloves laung
1 stick cinnamon
1 tbsp fried cashewnuts
1 tbsp kismis
1 tsp garam masala powder
salt to taste
Method
1. Boil green peas, green beans, potatoes in hot water and keep aside.
2. Put the ghee in a vessel and fry the shahjeera and let them crackle, once it crackle add asafoetida, laung, cinnamon.
3. Add the green chili paste, onion and fry for a little time.
4. Add the boiled green peas, green beans, potatoes, garam masala powder, lemon juice and salt and cook for 5 mins.
5. Add the cooked rice in it and mix it slowly.
6. Serve hot garnished with cashewnuts and kismis.
