Sev Usal is traditionally from Maharashtrian cuisine, but it is also popular in Gujarat.It consists of a "Ragda" or gravy made of green peas topped with Sev.
Ingredients
1 cup green peas
1 cup onion paste
1 cup tomato paste
1 tbps ginger garlic paste
1 tbsp red chilli powder
1 tbsp turmeric powder
1 tbsp garam masala
1 tsp asafoetida
2 tbsp ghee
1 tsp jaggery
1 cup sev(Namkin)
1 tbsp Red Garlic chutney
1 tbsp Green Coriander chutney
1 tbsp Date-Tamarind sweet chutney
2 cups water
salt to taste
Method
1. Soak the green peas in water overnight or at least for 6 hours. Then cook it into pressure cooker for 3-4 whistles so they are well-cooked and keep aside.
2. Heat ghee into frying pan and add asafoetida, tomato, onion and ginger-garlic paste and cook them for 10 mins.
3. Add water, salt, red chilli powder, jaggery, turmeric powder and garam masala into pan and mix it well and cook for 5 mins.
4. Add green peas and again cook for 5 mins.
5. Garnish with Sev, Red Garlic chutney, Green Coriander chutney, Date-Tamarind sweet chutney and serve it hot.
