Ingredients
6 flour tortillas
1 cup grated cheese
1 tbsp finely chopped mushrooms
1 tbsp jalapeno cuts into thin slices
1 cup finely chopped green onions
1/4 cup finely chopped cabbage
1/4 cup finely chopped capsicum
1 cup finely chopped fresh tomatoes
Butter/oil for toasting the tortillas
salt to taste
pepper to taste
Method
1. Heat oil in a pan and saute the green onions, mushrooms, jalapeno and capsicum until it tender.
2. Add cabbage, tomatoes, salt and pepper and mix it well and keep aside.
3. Heat a tawa on medium flame and take one flour tortilla and spread butter on it and toast it well.
4. Spread 1 tbsp of the vegetable mixture over one half of the tortilla.
5. spread cheese on top of this vegetable mixture.
6. Fold the tortilla covering the mixture into a half round shape and press down on the tortilla for a few seconds and cook it till cheese melts.
7. Cook it other side till both side turns into light brown.
8. Serve it Hot with Salsa.
