Vegetable Quesadillas Recipe


Vegetable Quesadillas
Vegetarian Quesadillas is very healthy and low fat Mexican cuisine dish, If you dont have tortillas at home, you can use up old roti’s and enjoy it. It cook and serve very quickly. It is a delicious dish for those weekend night dinners, starters and coctail parties.

Ingredients

6 flour tortillas
1 cup grated cheese
1 tbsp finely chopped mushrooms
1 tbsp jalapeno cuts into thin slices
1 cup finely chopped green onions
1/4 cup finely chopped cabbage
1/4 cup finely chopped capsicum
1 cup finely chopped fresh tomatoes
Butter/oil for toasting the tortillas
salt to taste
pepper to taste

Method

1. Heat oil in a pan and saute the green onions, mushrooms, jalapeno and capsicum until it tender.
2. Add cabbage, tomatoes, salt and pepper and mix it well and keep aside.
3. Heat a tawa on medium flame and take one flour tortilla and spread butter on it and toast it well.
4. Spread 1 tbsp of the vegetable mixture over one half of the tortilla.
5. spread cheese on top of this vegetable mixture.
6. Fold the tortilla covering the mixture into a half round shape and press down on the tortilla for a few seconds and cook it till cheese melts.
7. Cook it other side till both side turns into light brown.
8. Serve it Hot with Salsa.
