Vegetable Singapuri Recipe


Vegetable Singapuri is Singaporean style vegetable with gravy which having some spices and boiled vegetables.

Ingredients

1/2 cup green peas
1 cup cauliflower cuts into medium pieces
1/4 cup potatoes cuts into medium pieces
1/4 cup carrots cuts into long strips
a pinch of soda
2 tbsp ghee
2 tbsp grated cheese
1 tbsp chopped coriander leaves
10-12 cashew nuts
1 small piece ginger
2 finely chopped onions
5 cloves garlic
4 tbsp tomato pure
1 tbsp chilli sauce
5 kashmiri red chillies
1/4 tbsp coriander seeds
1 tsp cumin seeds
4 cardamom pods
2 pieces cinnamon
4 cloves
1/4 cup mawa
1/4 cup cream
salt to taste

 Method

1. Apply soda and salt to the vegetables and steam it.
2. Mix cashewnuts, ginger, onions, garlic, tomato pure, chilli sauce, roasted cinnamon, cloves, cardamom, coriander seeds and cumin seeds and grind it well.
3. Mix mawa to the grinded paste.
4. Add cream to the paste and mix it well.
5. Heat the ghee into vessel and fry the paste for at least 4 to 5 mins till the ghee gets separates.
6. Add boiles vegetables and salt and mix it.
7. Add water or milk if it needs for making a thick gravy and cook it till it turns into thickens.
8. Put it into bowl and garnish it with grated cheese and coriander leaves and serve hot with roti or rice.
